  • 1 cup shredded mozzarella cheese (113g)
  • 3 tablespoons everything bagel seasoning
  • 1 cup panko breadcrumbs (100g) – gluten-free panko can be used
  • 4 tablespoons melted butter (56g)
  • 2 tablespoons finely chopped fresh chives or green onions (optional)
  • Optional dippers: celery sticks, carrot sticks, pita chips, sliced baguette

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Whip the feta cheese: In a bowl, combine 1 cup crumbled feta and softened cream cheese. Using a hand mixer, whip until smooth and creamy (2-3 minutes). Add 1-2 tablespoons sour cream if needed to loosen texture.
  3. Mix the buffalo chicken filling: In a large bowl, combine shredded chicken, whipped feta mixture, remaining sour cream (about ½ cup), and buffalo sauce (½ cup). Stir until evenly incorporated.
  4. Fold in shredded mozzarella cheese gently.
  5. Transfer the dip to a 9-inch baking dish and spread evenly.
  6. Prepare the everything bagel crust: Mix panko breadcrumbs, everything bagel seasoning, and melted butter until crumbs are evenly coated.
  7. Sprinkle the crust mixture evenly over the dip.
  8. Bake for 20-25 minutes until crust is golden brown and dip is bubbling.
  9. Let cool for 5 minutes, then garnish with chopped chives or green onions.
  10. Serve warm with celery sticks, carrot sticks, pita chips, or toasted baguette slices.

Notes

If dip is too thick before baking, stir in an extra tablespoon of sour cream; if too thin, add more shredded cheese. Let dip rest 5 minutes after baking to set. For extra melty cheese, broil 1-2 minutes watching closely. Use gluten-free panko or almond flour for gluten-free crust. Dairy-free versions can substitute coconut yogurt and dairy-free cheese.
