  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 8 oz (225g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1/2 cup (60g) walnuts, toasted and chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 inch loaf pan with butter or line it with parchment paper.
  2. Toast the walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently until fragrant and lightly browned. Let cool.
  3. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  4. In a large bowl, beat the softened unsalted butter and granulated sugar until pale and fluffy, about 3 minutes with an electric mixer.
  5. Beat in the eggs one at a time, then stir in the vanilla extract until smooth and glossy.
  6. Mash the ripe bananas thoroughly and fold them gently into the wet mixture.
  7. Gradually add the dry ingredients to the wet, folding carefully with a spatula until just combined. Do not overmix.
  8. In a small bowl, blend the softened cream cheese with powdered sugar until smooth and creamy.
  9. Pour half the banana batter into the loaf pan. Dollop half the cream cheese mixture over it and gently swirl with a knife or skewer to create marbled patterns.
  10. Add the remaining batter on top, then repeat with the rest of the cream cheese mixture, swirling again.
  11. Sprinkle the toasted walnuts evenly over the top, pressing them in slightly.
  12. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
  13. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
