  • 2 cups (480 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • ⅓ cup (80 ml) pure maple syrup
  • 3 tablespoons (45 ml) bourbon whiskey
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • ¼ cup (50 g) brown sugar
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Cut the stale bread into roughly 1-inch cubes. Spread cubes evenly in a greased 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, whole milk, heavy cream, maple syrup, bourbon, vanilla extract, cinnamon, and salt until smooth.
  3. Pour the custard mixture evenly over the bread cubes. Gently press the bread down to soak up the custard without mashing. Let soak for at least 30 minutes at room temperature or cover and refrigerate overnight.
  4. Mix brown sugar and cinnamon in a small bowl. Sprinkle evenly over the soaked bread before baking.
  5. Preheat oven to 350°F (175°C). Bake uncovered for 45-50 minutes until the top is golden brown and custard is set but slightly jiggly in the center.
  6. Let cool for 10 minutes before serving. Optionally drizzle with extra maple syrup or dust with powdered sugar.
