These cosmic brownie bars combine fudgy, rich chocolate brownies with colorful rainbow chips for a fun and indulgent treat perfect for any occasion.

  • 1 cup (226g) unsalted butter, melted and slightly cooled
  • 1 1/2 cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour, sifted
  • 3/4 cup (75g) unsweetened cocoa powder, sifted (preferably Dutch-processed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup (about 175g) rainbow chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, whisk together melted butter and granulated sugar until smooth and shiny.
  3. Add eggs one at a time, whisking well after each addition, then stir in vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Slowly fold the dry ingredients into the wet mixture until just combined; do not overmix.
  6. Reserve 1/4 cup of rainbow chips for topping and fold the remaining 3/4 cup gently into the batter.
  7. Spread the batter evenly in the prepared pan and sprinkle the reserved rainbow chips on top.
  8. Bake for 25-30 minutes, checking at 25 minutes. The edges should pull away slightly and a toothpick inserted near the center should come out with a few moist crumbs.
  9. Remove from oven and cool completely on a cooling rack before slicing.

Notes

Use room temperature eggs and slightly cooled melted butter to avoid cooking the eggs prematurely. Fold in rainbow chips gently to preserve their color and shape. Avoid overmixing the batter to keep brownies fudgy and chewy. Use a metal pan for crispier edges or glass for even baking. Cool completely before slicing for clean edges.
