  • 1/3 cup honey (113g)
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional, 43g)

Instructions

  1. In a large bowl, combine rolled oats, ground flaxseed, and chia seeds if using. Stir well to evenly distribute.
  2. Add peanut butter and honey to the bowl. Mix with a sturdy spatula or wooden spoon until the mixture starts coming together and is sticky but manageable.
  3. Pour in vanilla extract and mix again to blend the flavor.
  4. Fold in mini chocolate chips gently so they don’t melt but are evenly spread (optional).
  5. Check consistency: if too dry, add a teaspoon of honey or peanut butter; if too sticky, sprinkle a little more oats.
  6. Use your hands to roll the mixture into 1-inch balls, making about 15-18 energy balls. Wet your palms slightly with water if the mixture sticks to your hands.
  7. Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  8. Transfer the chilled balls to an airtight container. Store in the refrigerator for up to one week or freeze for up to three months.
