A quick and easy summer cocktail featuring fresh peaches, mint, bourbon, and a splash of soda water for a refreshing and balanced drink.

  • 2 ripe peaches, peeled and sliced
  • About 10 fresh mint leaves, plus extra for garnish
  • 2 ounces bourbon per serving
  • 1 ounce simple syrup (homemade or store-bought)
  • 3/4 ounce fresh lemon juice
  • Soda water to top off
  • Ice cubes as needed (crushed ice preferred)

Instructions

  1. Peel and slice 2 ripe peaches into chunks, soft enough to muddle but not mushy.
  2. Place peach chunks and about 10 fresh mint leaves in a mixing glass. Gently muddle to release juices and oils without tearing the mint leaves completely (about 1-2 minutes).
  3. Add 2 ounces bourbon, 1 ounce simple syrup, and 3/4 ounce freshly squeezed lemon juice to the mixing glass.
  4. Fill the glass with crushed or cubed ice almost to the top.
  5. Stir with a bar spoon for about 20 seconds or shake gently for 10-15 seconds if using a shaker until well combined and chilled.
  6. Strain the cocktail into a highball or old-fashioned glass filled with fresh ice cubes. Straining is optional for a rustic texture.
  7. Top with about 2 ounces soda water for a sparkling finish and adjust to taste.
  8. Garnish with a sprig of fresh mint and a thin peach slice on the rim.

Notes

Use ripe, juicy peaches for best flavor. Avoid over-muddling mint to prevent bitterness. Adjust sweetness with simple syrup to taste. Prepare muddled fruit and bourbon mix up to 24 hours ahead, but add soda water and ice just before serving. For a lower-alcohol version, reduce bourbon to 1 ounce and increase soda water. Substitute simple syrup with honey or maple syrup for paleo-friendly option.
