  • 2 cans (15 ounces each) white beans (cannellini or great northern), drained and rinsed
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup heavy cream (120 ml)
  • ½ cup chicken broth (120 ml), low sodium preferred
  • 1 tablespoon olive oil
  • 1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried)
  • Salt and pepper, to taste
  • Crushed red pepper flakes, optional
  • Parmesan cheese, freshly grated for serving (optional)

Instructions

  1. Prepare your ingredients: chop the onion, mince the garlic, chop the rosemary, and drain and rinse the beans.
  2. Heat olive oil in a large skillet over medium heat. Add Italian sausage, breaking it up with a spoon. Cook 7-9 minutes until browned and slightly crispy. Remove sausage and set aside, leaving fat in pan.
  3. Add chopped onions to the skillet and sauté 4-5 minutes until translucent. Add garlic and rosemary and cook 1 minute until fragrant.
  4. Stir in white beans, chicken broth, and heavy cream. Bring to a low simmer, reduce heat to medium-low, and cook 5 minutes until sauce thickens and beans soften.
  5. Return sausage to skillet, stir to combine, and season with salt, pepper, and optional crushed red pepper flakes. Cook 2-3 minutes to meld flavors.
  6. Taste and adjust seasoning. If too thick, add a splash more broth; if too thin, simmer longer uncovered. Remove from heat and sprinkle with Parmesan cheese before serving.

Notes

Do not overcrowd the pan when browning sausage to ensure proper caramelization. Use a gentle simmer to prevent cream from curdling. Rinse canned beans to reduce saltiness. For dairy-free, substitute heavy cream with coconut cream or plant-based alternatives. Leftovers store well in the fridge for up to 3 days and freeze for up to 2 months. Reheat gently on stovetop with added broth if needed.
