  • 2 medium English cucumbers
  • 1 (5-ounce/140g) can high-quality tuna packed in water or olive oil
  • 2 tablespoons (30g) Greek yogurt (or dairy-free coconut yogurt)
  • 1 teaspoon (5g) Dijon mustard
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 tablespoon (5g) finely chopped fresh dill or parsley
  • Salt and black pepper to taste
  • Optional: finely diced celery or red onion
  • Optional: a few capers
  • Optional: shredded cheese or chopped avocado for topping

Instructions

  1. Wash and slice the cucumbers in half lengthwise to yield 4 long halves.
  2. Using a small spoon or melon baller, gently scoop out the seeds and some flesh to create a shallow well in each cucumber half.
  3. Drain the canned tuna well and transfer to a mixing bowl.
  4. Add Greek yogurt, Dijon mustard, and fresh lemon juice to the tuna.
  5. Stir in finely chopped fresh dill or parsley, and season with salt and black pepper to taste.
  6. If using optional diced celery or onion, fold them in now.
  7. Mix thoroughly with a fork until the tuna is creamy but still has some texture.
  8. Spoon the tuna mixture evenly into each cucumber half, packing gently but not overflowing.
  9. Chill in the fridge for 10-15 minutes if desired to help flavors meld and keep the boats crisp.
  10. Serve chilled or at room temperature.
