A quick and easy recipe featuring firm hard-boiled egg whites filled with a creamy, zesty avocado mixture, perfect for brunch, snacks, or light meals.

  • 6 large eggs (room temperature)
  • 2 medium ripe avocados
  • 1 tablespoon freshly squeezed lime juice
  • 1 small jalapeño, seeded and finely minced (optional)
  • 2 tablespoons fresh cilantro, finely chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt (to taste)
  • Freshly ground black pepper (to taste)
  • Optional garnish: smoked paprika or chili flakes

Instructions

  1. Place 6 large eggs in a single layer in a saucepan and cover with cold water by about an inch.
  2. Bring to a rolling boil over medium-high heat. Once boiling, turn off the heat and cover the pan. Let eggs sit for 10 to 12 minutes for fully hard-boiled yolks.
  3. Drain hot water and immediately transfer eggs to a bowl of ice water. Let sit for at least 5 minutes to cool completely and stop cooking.
  4. Gently tap each egg on the counter to crack the shell all over, then peel under running water, removing any bits of membrane. Pat dry with paper towels.
  5. Using a sharp paring knife, cut each egg in half lengthwise. Carefully scoop out yolks into a mixing bowl, trying not to break the whites. Set whites aside on a serving plate.
  6. Cut the avocados in half, remove pits, and scoop flesh into the bowl with egg yolks. Add lime juice, minced jalapeño, chopped cilantro, garlic powder, cumin, salt, and pepper.
  7. Use a fork or whisk to mash and blend the ingredients until smooth but still a little chunky. Taste and adjust seasoning as needed.
  8. Spoon the avocado mixture into the hollowed egg whites. For a polished look, use a piping bag or plastic bag corner to pipe the filling evenly.
  9. Sprinkle the filled eggs with smoked paprika or chili flakes for color and a hint of smoky flavor. Serve immediately or chill in the fridge for up to 2 hours before serving.

Notes

Use eggs that are a few days old for easier peeling. Avoid over-mashing the avocado filling to maintain texture. Prepare avocado filling fresh and assemble just before serving to prevent browning and soggy whites. Serve within 2 hours after filling for best texture. Optional garnishes add color and flavor.
