A light, refreshing, and easy-to-make summer snack combining juicy watermelon, salty feta, and fresh mint with a bright lime dressing.

Ingredients

  • 4 cups seedless watermelon, cubed (about 600 grams)
  • 1 cup crumbled feta cheese (about 150 grams)
  • 1/4 cup fresh mint leaves, roughly chopped (about 15 grams)
  • 1 tablespoon extra virgin olive oil (15 ml)
  • 1 tablespoon fresh lime juice (from about half a lime, 15 ml)
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, optional

Instructions

  1. Cut seedless watermelon into approximately 1-inch (2.5 cm) cubes and place in a mixing bowl.
  2. Crumble about 1 cup (150g) feta cheese into small pieces.
  3. Roughly chop fresh mint leaves, about 1/4 cup (15g), or leave small leaves whole.
  4. In a small bowl, whisk together 1 tablespoon (15 ml) extra virgin olive oil and juice from half a lime (about 15 ml). Add a pinch of sea salt and freshly ground black pepper if desired.
  5. Gently combine the watermelon cubes, crumbled feta, and chopped mint in the mixing bowl. Pour the dressing over and toss lightly to avoid breaking down the watermelon.
  6. Optional: Chill the salad bites in the fridge for 10-15 minutes before serving to meld flavors.
  7. Serve using a slotted spoon onto a platter or individual plates, garnished with extra mint leaves or crumbled feta.

Notes

Gently drain excess watermelon juice before tossing to avoid soggy bites. Toss lightly to keep watermelon cubes intact. For a dairy-free version, substitute feta with marinated tofu. Adding a light drizzle of balsamic glaze before serving adds sweetness and depth. Can be made into skewers for easy serving.
