  • 4 boneless, skinless chicken breasts (68 ounces each)
  • Juice and zest of 2 fresh lemons
  • 3 cloves garlic, minced
  • 1/4 cup (60 ml) extra virgin olive oil
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon kosher or sea salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Prepare the marinade by whisking together lemon juice and zest, olive oil, minced garlic, rosemary, thyme, parsley, salt, black pepper, and red pepper flakes if using.
  2. Place chicken breasts in a resealable plastic bag or glass container and pour marinade over them. Seal and turn to coat evenly. Refrigerate for at least 30 minutes, up to 4 hours.
  3. Preheat grill to medium-high heat (about 400°F). Clean and lightly oil the grates.
  4. Remove chicken from marinade, letting excess drip off. Grill chicken for 6-7 minutes per side, flipping once, until internal temperature reaches 165°F.
  5. Transfer chicken to a plate and loosely cover with foil. Let rest for 5-10 minutes to redistribute juices.
  6. Slice against the grain and serve warm.

Notes

If chicken browns too quickly, move to a cooler part of the grill to avoid burning. Discard leftover marinade or simmer separately if using as sauce. Let chicken rest after grilling to keep it juicy. Use a meat thermometer to ensure proper doneness. Can be cooked in a grill pan or cast iron skillet if no grill is available.
