  • ½ teaspoon salt (preferably kosher salt), or to taste

  • 1 tablespoon extra virgin olive oil (optional)

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunge into ice water, or use a sharp paring knife or vegetable peeler. Dice into roughly ½-inch cubes. (About 10 minutes)
  2. Slice the jalapeño in half, remove seeds if less heat is desired, then finely dice. Wash hands thoroughly after handling. (About 5 minutes)
  3. Finely dice the red onion into small cubes similar in size to the peaches. (About 3 minutes)
  4. Roughly chop the fresh cilantro, including tender stems, to make about ¼ cup. (About 2 minutes)
  5. In a medium mixing bowl, gently toss together peaches, jalapeño, red onion, and cilantro. Add lime juice, ground cumin, salt, and black pepper. Stir lightly to combine without bruising the peaches. (2 minutes)
  6. Drizzle in the olive oil if using and give one last gentle stir. (1 minute)
  7. Let the salsa rest at room temperature for at least 10 minutes to allow flavors to meld. (10 minutes)

Notes

For a chunkier salsa, dice ingredients larger; for smoother texture, pulse briefly in a food processor without pureeing. Drain excess juice if peaches are very juicy to keep chips crisp. Adjust heat by removing jalapeño seeds or adding more peppers. Let salsa rest for at least 10 minutes before serving to meld flavors. Store in airtight container in refrigerator up to 2 days; drain excess liquid before serving leftovers.
