  • 12 slices white sandwich bread, crusts removed
  • 1 large English cucumber, peeled and thinly sliced (about 1/8 inch or 3 mm thick)
  • 8 ounces (225 grams) cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • Zest of half a lemon
  • Pinch of garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Butter, softened (optional, for spreading on bread to prevent sogginess)

Instructions

  1. In a small bowl, combine softened cream cheese, chopped fresh dill, lemon zest, garlic powder, salt, and black pepper. Mix until smooth and well combined, about 5 minutes.
  2. Peel and slice the cucumber very thinly (about 1/8 inch or 3 mm). Remove seeds gently with a spoon if watery to avoid sogginess.
  3. Remove crusts from the bread slices. Optionally, spread a thin layer of softened butter on each slice to add richness and prevent sogginess.
  4. Spread about 1 tablespoon of the dill cream cheese mixture evenly over each bread slice.
  5. Layer 4-5 cucumber slices on half of the bread slices. Top with the remaining bread slices, cream cheese side down.
  6. Press sandwiches gently together, trim off crust edges if not already removed, and cut each sandwich into 3 or 4 finger-sized rectangles or triangles.
  7. Place sandwiches on a plate, cover with a kitchen towel or plastic wrap, and refrigerate for at least 15 minutes before serving.

Notes

Use thinly sliced cucumbers and remove seeds to avoid sogginess. Soften cream cheese at room temperature for easier mixing. Assemble sandwiches shortly before serving for best texture. The cream cheese spread can be made a day ahead. Optional butter layer on bread helps prevent sogginess. Variations include using different herbs, adding radishes or nuts, or using vegan/gluten-free substitutes.
