Instructions

  1. Prepare the Vegetables: Peel and dice 2 medium cucumbers into 1/2-inch cubes. Halve 2 cups of cherry or grape tomatoes. Finely chop 1/4 of a small red onion if using. Dice 1 large ripe avocado into chunks similar in size to the cucumber.
  2. Chop the Herbs: Roughly chop 2 tablespoons of fresh parsley and 1 tablespoon of fresh basil or dill.
  3. Make the Lemon Herb Vinaigrette: In a small bowl or jar, combine 3 tablespoons fresh lemon juice, 1/4 cup extra virgin olive oil, 1 teaspoon Dijon mustard, 1 minced garlic clove, and 1/2 teaspoon honey or maple syrup. Add salt and pepper to taste. Whisk or shake until emulsified.
  4. Toss the Salad: In a large mixing bowl, gently combine cucumbers, tomatoes, avocado, red onion, and herbs. Pour vinaigrette over salad and toss carefully to coat without breaking avocado chunks.
