  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare the strawberries: In a medium bowl, combine sliced strawberries, sugar, and lemon juice. Stir gently and let macerate at room temperature for at least 15 minutes.
  2. Make the shortcake batter: Preheat oven to 425°F (220°C). In a large bowl, whisk together flour, sugar, baking powder, salt, and lemon zest if using. Add cold cubed butter and cut into flour mixture with a pastry cutter or forks until coarse crumbs with pea-sized butter bits remain.
  3. Add wet ingredients: In a separate bowl, whisk cold milk and beaten egg. Pour into flour mixture and gently stir just until combined. Do not overmix.
