  • 23 chipotle peppers in adobo sauce, minced (include sauce)
  • 2 tablespoons brown sugar

  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and black pepper to taste
  • 1 cup beef broth (240 ml)
  • 1216 small slider buns (soft, slightly sweet)
  • Chipotle Mayo:
  • ½ cup mayonnaise (120 ml)
  • 1 tablespoon lime juice
  • 1 minced chipotle pepper in adobo
  • Pinch of salt
  • Pickled red onions (optional)
  • Fresh cilantro for garnish

Instructions

  1. Trim excess fat from the brisket, leaving a thin layer to keep the meat moist during cooking (about 10 minutes).
  2. In a small bowl, combine minced chipotle peppers in adobo, brown sugar, paprika, garlic powder, onion powder, cumin, salt, and black pepper. Mix well (5 minutes).
  3. Massage the chipotle seasoning evenly over the brisket, coating all sides (5 minutes).
  4. Place the brisket in the slow cooker and pour the beef broth around it (not directly on the rub). Cover and cook on low for 8-10 hours or on high for 5-6 hours until fork-tender.
  5. While the brisket cooks, whisk together mayonnaise, lime juice, minced chipotle pepper, and a pinch of salt to make chipotle mayo. Refrigerate until ready to serve (10 minutes prep).
  6. Once cooked, remove the brisket and shred it using two forks. Mix the shredded brisket with some of the cooking juices to keep it juicy (5-7 minutes).
  7. Lightly toast slider buns on a baking sheet or grill pan until golden and slightly crispy (3-5 minutes).
  8. Assemble the sliders by spreading chipotle mayo on the bottom half of each bun, topping with shredded brisket, pickled red onions, and fresh cilantro leaves. Cap with the top bun.
  9. Serve immediately while warm.

Notes

Let the brisket rest for 15-20 minutes before shredding to redistribute juices. Use reserved cooking liquid to moisten shredded brisket if dry. Toast slider buns to prevent sogginess. For gluten-free, use gluten-free rolls or lettuce wraps. For dairy-free chipotle mayo, substitute avocado blended with lime and chipotle.
