Instructions

  1. Prepare the Strawberry Firecracker Sauce: Combine 2 cups chopped fresh strawberries, 1/4 cup granulated sugar, 1 tablespoon fresh lime juice, a pinch of red chili flakes, and 1/4 cup water in a small saucepan. Heat over medium, stirring occasionally. Simmer gently for 10 minutes until strawberries break down and sauce thickens slightly. Remove from heat and cool completely.
  2. Make the Cheesecake Filling: Beat 8 ounces softened cream cheese with 1/2 cup powdered sugar until smooth. Add 1 teaspoon vanilla extract and lemon zest. In a separate bowl, whip 1 cup cold heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until fluffy.
  3. Assemble the Layers: In an 8×8-inch pan, spread a thin layer of cheesecake filling. Cover with graham crackers, breaking as needed. Spoon a few tablespoons of cooled firecracker sauce over crackers, then add sliced fresh strawberries. Repeat layers ending with a thick cheesecake layer and drizzle sauce on top.
  4. Chill Overnight: Cover tightly with plastic wrap and refrigerate at least 6 hours or overnight to allow layers to soften and meld.
