A quick and easy summer dessert featuring a buttery sugar cookie base topped with silky cream cheese frosting and fresh, vibrant berries. Perfect for gatherings and simple enough for any occasion.

Ingredients

Scale
  • 1 roll (16 oz / 454 g) refrigerated sugar cookie dough
  • 1 tablespoon granulated sugar (for sprinkling)
  • 8 oz (227 g) cream cheese, softened (full-fat preferred)
  • 1/4 cup (56 g) unsalted butter, softened
  • 1 cup (120 g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 12 tablespoons milk or heavy cream (to adjust consistency)
  • 1 cup (150 g) strawberries, hulled and sliced
  • 1 cup (125 g) blueberries
  • 1 cup (150 g) raspberries
  • Optional: 1/4 cup (60 ml) apricot jam (warmed for glazing)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Unroll the refrigerated sugar cookie dough and press it evenly onto the baking sheet into about a 12-inch circle or rectangle. Sprinkle 1 tablespoon of granulated sugar evenly over the top.
  3. Bake for 15-18 minutes until edges are golden brown and the center is set but still soft. Let cool completely on the pan, about 30-40 minutes.
  4. In a medium mixing bowl, beat together softened cream cheese and butter until smooth and creamy, about 2-3 minutes.
  5. Gradually add sifted powdered sugar and vanilla extract, mixing until fluffy. Add milk or cream a teaspoon at a time to reach a spreadable consistency. Avoid overmixing.
  6. Spread the cream cheese frosting evenly over the cooled cookie crust with a spatula.
  7. Arrange fresh berries (blueberries, sliced strawberries, raspberries) artistically on top. Pat berries dry before placing to prevent sogginess.
  8. Optional: Warm apricot jam until thin and lightly glaze the berries using a pastry brush or spoon for shine.
  9. Chill the assembled fruit pizza in the refrigerator for 30 minutes to set the frosting and meld flavors.
  10. Slice with a sharp knife dipped in hot water for clean cuts and serve.

Notes

Do not frost the cookie while warm to prevent melting. Pat berries dry before placing to avoid sogginess. Use a sharp serrated knife dipped in hot water for clean slicing. Optional apricot jam glaze adds shine and seals in freshness. Cooling the cookie completely before frosting is key for best results.
