  • 1/2 cup natural peanut butter (125g), creamy or chunky
  • 1/3 cup honey (113g)
  • 1/3 cup mini chocolate chips (60g)
  • 2 tablespoons chia seeds (optional)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine 1/2 cup natural peanut butter and 1/3 cup honey. Stir until smooth and well blended, about 1-2 minutes.
  2. Mix in 1 teaspoon vanilla extract and a pinch of salt.
  3. Add 1 1/2 cups old-fashioned rolled oats and 2 tablespoons chia seeds if using. Stir until oats are evenly coated. If mixture is too dry, add an extra teaspoon of honey.
  4. Fold in 1/3 cup mini chocolate chips gently to avoid melting or breaking.
  5. Cover the bowl and refrigerate for 20-30 minutes to firm up the mixture.
  6. Scoop tablespoon-sized portions and roll into smooth balls, about 20 bites total. Lightly dampen hands with water if mixture sticks.
  7. Place formed bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes before serving.

Notes

Use natural or no-stir peanut butter for best texture. Chilling the mixture before rolling is essential to prevent sticky, misshapen bites. Rolled oats provide the best chewy texture; avoid instant oats. For nut-free version, substitute peanut butter with sunflower seed or soy nut butter. Store in airtight container in fridge up to one week or freeze up to three months.
