  • 2 tablespoons Dijon mustard

  • 2 garlic cloves, minced

  • 1 tablespoon apple cider vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon dried thyme (or rosemary/oregano as substitute)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, and dried thyme.
  3. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, minced garlic, olive oil, and apple cider vinegar until smooth. Set aside.
  4. Heat a large oven-safe skillet over medium-high heat. Add a splash of olive oil. When hot and shimmering, add chicken breasts.
  5. Sear chicken for about 3 minutes on each side until golden brown but not fully cooked.
  6. Reduce heat to medium-low and pour the honey mustard sauce over the chicken, coating each piece evenly.
  7. Transfer the skillet to the preheated oven and bake for 15-18 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove skillet from oven and let chicken rest for 5 minutes.
  9. Serve chicken with any remaining sauce spooned over the top.
