  • 6 tablespoons unsalted butter (85 grams), cold and cubed
  • Pinch of salt

Instructions

  1. Prep the peaches by scoring a shallow ‘X’ on the bottom, blanching in boiling water for 30 seconds, then plunging into ice water to peel easily. Slice peaches into 1/2-inch thick slices.
  2. In a large bowl, toss peach slices with granulated sugar, lemon juice, cornstarch, and ground cinnamon until evenly coated.
  3. In another bowl, combine rolled oats, almonds, brown sugar, all-purpose flour, and salt.
  4. Add cold, cubed butter to the oat mixture and cut in using a pastry cutter, two forks, or fingertips until mixture resembles coarse crumbs with some pea-sized bits.
  5. Transfer peach filling to a greased 9-inch baking dish and spread evenly.
  6. Sprinkle the almond topping evenly over the peaches.
  7. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes until topping is golden brown and peach filling is bubbling.
  8. Let the crisp cool for at least 15 minutes before serving to allow juices to thicken.
