A quick and creamy turkey pinwheels recipe perfect for toddler lunches, made with just five simple ingredients and packed with veggies.

Ingredients

  • Whole wheat tortillas
  • Sliced deli turkey (low-sodium preferred)
  • Softened cream cheese
  • Finely chopped veggies (shredded carrots and diced cucumber)
  • Fresh baby spinach leaves

Instructions

  1. Finely chop or shred carrots and cucumber; roughly chop baby spinach if large (about 5 minutes).
  2. In a small bowl, stir softened cream cheese until smooth; optionally fold in chopped veggies and spinach for even flavor.
  3. Lay a whole wheat tortilla flat and spread a thin, even layer of cream cheese mixture over it.
  4. Layer 2-3 slices of turkey evenly over the cream cheese.
  5. Roll the tortilla tightly but gently; wrap in plastic wrap and chill for 10-15 minutes to firm up.
  6. Remove plastic wrap and slice the roll into 1-inch pinwheels; arrange on a plate and serve immediately or pack for lunch.

Notes

Use softened cream cheese for easy spreading to avoid tearing tortillas. Chill rolled tortillas wrapped in plastic wrap for 10-15 minutes before slicing to keep pinwheels neat.
