Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the eggs, placing the whites in a large mixing bowl and the yolks in a smaller one. Let them come to room temperature for about 5 minutes.
  3. Using an electric mixer, whip the egg whites until stiff peaks form, about 3-5 minutes.
  4. In the smaller bowl, beat the softened cream cheese with the egg yolks and baking powder until smooth and slightly fluffy.
  5. Gently fold about one-third of the whipped egg whites into the yolk-cream cheese mixture to lighten it. Then fold in the remaining whites in two parts, using a gentle sweeping motion to keep the batter airy.
  6. Scoop the batter onto the prepared baking sheet in rounds about 3-4 inches wide, spacing them apart.
  7. Bake for 25-30 minutes until puffed and lightly golden. They should feel set and slightly springy.
  8. Remove from oven and cool completely on a wire rack before serving.

Ensure egg whites are free of yolk or grease for best whipping results. Fold egg whites gently to maintain fluffiness. Baking at a low temperature (300°F) prevents browning and drying out.
