Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, use an electric mixer to beat softened unsalted butter with granulated sugar and brown sugar until light and fluffy, about 3 minutes.
  4. Beat in eggs one at a time, then stir in pure vanilla extract.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed or folding gently with a spatula until no visible flour remains.
  6. Gently fold in rainbow sprinkles using a spatula, being careful not to overmix.
  7. Use a medium cookie scoop or tablespoon to drop dough balls (about 1 ½ tablespoons each) onto prepared baking sheets, spacing them 2 inches apart.
