A simple and nourishing bento box lunch featuring turkey roll-ups layered with cream cheese and herbs, crispy homemade cheese crackers, and fresh seasonal fruit. Ready in under 20 minutes, perfect for work, school, or a light meal.

Ingredients

Scale
  • 8 slices deli turkey breast (low-sodium, thinly sliced)
  • 4 oz cream cheese, softened (plain or herb-flavored)
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon Dijon mustard (optional)
  • Handful fresh spinach leaves or baby arugula
  • 1 cup shredded sharp cheddar cheese
  • 1 cup all-purpose flour (or almond flour for gluten-free)
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder (optional)
  • 6 tablespoons unsalted butter, cold and cubed
  • 23 tablespoons cold water
  • 1 cup fresh mixed fruit (seasonal, e.g., strawberries, grapes, apple slices)

Instructions

  1. Prepare the Cheese Crackers Dough: In a medium bowl, whisk together flour, salt, and garlic powder. Add cold cubed butter and blend with a food processor or pastry cutter until mixture resembles coarse crumbs. Slowly add cold water until dough just comes together. Wrap dough in plastic wrap and refrigerate for 20 minutes.
  2. Roll and Bake the Cheese Crackers: Preheat oven to 350°F. Roll dough on a lightly floured surface to about 1/8-inch thickness. Sprinkle shredded cheddar cheese evenly over dough and gently press in. Cut dough into small squares or desired shapes. Place crackers on parchment-lined baking sheet about 1 inch apart. Bake 12–15 minutes until golden and crisp. Cool completely on a wire rack.
  3. Make the Turkey Roll-Ups: In a small bowl, mix softened cream cheese, chopped chives, and Dijon mustard if using. Lay turkey slices flat, spread a thin layer of cream cheese mixture on each, add a few spinach leaves or arugula, then roll tightly. Secure with toothpicks if needed.
  4. Prepare the Fruit: Wash and slice fresh seasonal fruit. Pat dry to avoid sogginess.
  5. Assemble the Bento Box: Arrange turkey roll-ups, cheese crackers, and fresh fruit neatly in a lunch container. Use compartments or silicone cups to keep flavors separate if desired.

Notes

Keep butter cold when making cracker dough for flaky texture. Do not overstuff turkey roll-ups to prevent falling apart. Cool crackers completely before packing to avoid sogginess. Pat fruit dry and store separately to keep lunch fresh. Cheese crackers can be baked up to 2 days ahead and stored in airtight container. Re-crisp crackers in oven if softened.
