  • 3 cloves garlic, minced
  • 2 tablespoons (30 ml) fresh lemon juice
  • 2 tablespoons (30 ml) olive oil (extra virgin preferred)
  • 1 teaspoon dried oregano
  • Salt to taste (about 1/2 teaspoon)
  • Black pepper to taste (about 1/4 teaspoon)

Instructions

  1. In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, dried oregano, salt, and black pepper. Whisk until smooth and creamy (about 3 minutes).
  2. Pat dry 4 boneless, skinless chicken breasts or thighs (about 1.5 pounds / 700 grams) with paper towels.
  3. Place the chicken in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring every piece is well coated. Seal the bag or cover the dish with plastic wrap.
  4. Refrigerate for at least 1 hour, ideally 3-4 hours. Do not marinate longer than 12 hours to avoid texture changes.
  5. Preheat grill to medium-high heat (about 400°F / 200°C). Clean and oil the grates.
  6. Remove chicken from marinade, letting excess drip off. Place chicken on the grill and cook for 5-7 minutes per side until grill marks appear and internal temperature reaches 165°F (74°C), about 12-15 minutes total.
  7. Transfer chicken to a plate and let rest for 5 minutes before slicing.
  8. Slice against the grain and serve with your favorite sides.

Marinate chicken for at least 1 hour for best tenderness; avoid marinating longer than 12 hours to prevent the yogurt from ‘cooking’ the meat.
