A quick and simple recipe featuring chicken breasts stuffed with fresh mozzarella, ripe tomatoes, and basil, delivering classic Caprese flavors in a juicy, melty, and satisfying dinner.

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 8 oz (225 g) fresh mozzarella, sliced or torn into small pieces
  • 2 medium Roma or vine-ripened tomatoes, thinly sliced
  • 12 large fresh basil leaves, gently torn
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast on a cutting board. Using a sharp knife, carefully slice horizontally through the thickest part to create a pocket about 1 inch deep, stopping about ¾ of the way through. Keep edges intact.
  3. Season the inside and outside of each chicken breast with salt and pepper.
  4. Stuff each pocket with approximately 2 oz (60 g) mozzarella, 3 tomato slices, and 3-4 torn basil leaves. Press gently to close the pocket.
  5. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium heat. Once shimmering, add the stuffed chicken breasts and sear for 3-4 minutes per side until golden brown.
  6. Transfer the skillet or chicken breasts to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let the chicken rest for 5 minutes before serving.

Notes

Do not overstuff the chicken to prevent cheese from leaking. Searing before baking locks in juices and adds flavor. Use a meat thermometer to ensure chicken is cooked through. Let chicken rest after baking to keep it juicy. Wrapping in parchment paper during baking can help contain the cheese.
