  • 1/2 teaspoon salt
  • 1 teaspoon espresso powder (optional)
  • For the Salted Caramel Swirl:
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup heavy cream, warmed
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving overhang for easy removal. Lightly grease the parchment.
  2. Make the salted caramel: Heat 1 cup granulated sugar in a heavy-bottomed saucepan over medium heat, stirring constantly until it melts into a smooth amber liquid (7-10 minutes).
  3. Add butter pieces carefully and stir until melted and combined.
  4. Slowly pour in warmed heavy cream while stirring continuously. Let bubble for about 1 minute, then remove from heat and stir in sea salt. Set aside to cool slightly.
  5. Prepare the brownie batter: In a large bowl, whisk melted butter with granulated sugar until combined. Add eggs one at a time, whisking well after each.
  6. Mix in vanilla extract.
  7. In a separate bowl, sift together flour, cocoa powder, salt, and espresso powder.
  8. Gradually fold dry ingredients into wet batter using a rubber spatula. Stop when just combined.
  9. Pour half the brownie batter into the prepared pan, smoothing evenly.
  10. Drizzle about half of the salted caramel over the batter in dollops.
  11. Pour remaining brownie batter over the caramel layer, then add the rest of the caramel on top.
  12. Using a butter knife or skewer, gently swirl the caramel through the batter to create ribbons without overmixing.
  13. Bake for 30-35 minutes, starting to check at 30 minutes. Brownies are done when a toothpick inserted near the center comes out with moist crumbs but no wet batter.
  14. Remove from oven and let cool completely on a wire rack before slicing (at least 1 hour).

Notes

Watch the caramel closely to avoid burning. Use room temperature eggs for smoother batter. Don’t overmix the batter to keep brownies fudgy. Let brownies cool completely before slicing to set the caramel swirl. Microwave caramel briefly if too thick to swirl.
