A quick and easy crispy pull-apart garlic cheese bread with gooey mozzarella and Parmesan cheese, served with a tangy marinara dip. Perfect for busy weeknights, casual get-togethers, or cozy snacks.

Ingredients

Scale
  • 1 round sourdough or Italian bread loaf (1012 inches diameter)
  • 1/2 cup (115g) unsalted butter, softened
  • 45 garlic cloves, finely minced or grated
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 cups (200g) shredded mozzarella cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning (optional)
  • 1 cup (240ml) marinara sauce for dipping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, minced garlic, chopped parsley, dried Italian seasoning (if using), salt, and black pepper. Mix well until smooth.
  3. Place the bread loaf on a cutting board. Using a sharp bread knife, cut the bread into a grid pattern vertically and horizontally every 1.5 inches, without cutting all the way through the bottom crust.
  4. Spread the garlic butter mixture generously into every cut and crevice of the bread using a spoon or pastry brush.
  5. Stuff shredded mozzarella and grated Parmesan cheese into the cuts between the bread pieces.
  6. Wrap the entire loaf loosely in aluminum foil and place it on a baking sheet or cast iron skillet.
  7. Bake for 15 minutes to melt the cheese and allow the butter to soak in.
  8. Remove the foil and bake for an additional 10 minutes until the top is golden and crispy.
  9. Serve warm with a bowl of marinara sauce for dipping.

Notes

Use a serrated bread knife to avoid squishing the loaf. Let butter soften fully before mixing for even flavor. Wrapping the bread in foil during the first part of baking melts cheese without drying out the bread. For extra crispiness, broil for 1-2 minutes after baking. Avoid microwaving leftovers to maintain crisp texture.
