  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Peel and cut russet potatoes into 1-inch chunks. Rinse under cold water to remove excess starch and pat dry with a kitchen towel.
  2. In a large mixing bowl, toss potatoes with olive oil, Cajun seasoning, smoked paprika, salt, and pepper until evenly coated.
  3. Heat a large skillet over medium heat. Add the seasoned potatoes in a single layer without overcrowding. Cook undisturbed for 5-7 minutes until the bottoms are golden and crispy.
  4. Flip potatoes and continue cooking, stirring occasionally, for about 15 minutes total until fork-tender with crispy edges.
  5. Push potatoes to one side of the pan. Add butter to the empty side and let it melt.
  6. Add sliced andouille sausage and minced garlic to the melted butter. Cook together, stirring gently to coat the potatoes, for about 5 minutes until butter bubbles and thickens slightly.
  7. Taste and adjust seasoning with extra Cajun spice or salt if needed.
  8. Remove from heat and sprinkle with chopped fresh parsley and optional green onions.
  9. Serve immediately while warm and crispy.

Notes

For extra crispy potatoes, parboil for 5 minutes before seasoning. Avoid overcrowding the pan to prevent steaming. Use medium heat to avoid burning butter. Butter can be swapped with vegan butter or coconut oil for a dairy-free version. Adjust spice level by modifying Cajun seasoning and cayenne. Leftovers reheat best in a skillet to maintain crispiness.
