  • 12 medium fresh jalapeños, halved and seeded
  • 8 oz (225 g) full-fat cream cheese, softened
  • 1 cup (100 g) sharp cheddar cheese, finely shredded
  • 12 slices thin-cut bacon, cut in half lengthwise if wide
  • ½ tsp garlic powder
  • ¼ tsp onion powder (optional)
  • Salt and black pepper to taste
  • Optional add-ins: chopped green onions or cilantro, smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice each jalapeño in half lengthwise and carefully remove seeds and membranes to reduce heat if desired. Set aside.
  3. In a medium bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
  4. Fill each jalapeño half with the cheese mixture, pressing gently to fill all corners without overstuffing.
  5. Wrap each stuffed jalapeño half tightly with a bacon strip, securing with a toothpick if needed.
  6. Line a baking sheet with parchment paper or foil. Optionally, place a cooling rack on the sheet and arrange poppers on the rack, seam side down.
  7. Bake for 20-25 minutes until bacon is crispy and cheese is bubbly. Rotate the pan halfway through baking for even cooking and watch closely after 15 minutes to prevent burning.
  8. Let poppers rest for 5 minutes before serving to allow cheese to set and avoid burns.

Notes

For extra crispy bacon, broil for the last 2 minutes but watch carefully to avoid burning. Use thin-cut bacon for even cooking. Remove seeds and membranes to reduce heat. You can prepare and stuff jalapeños ahead and wrap with bacon just before baking. Reheat leftovers in the oven at 350°F for 10 minutes to keep bacon crispy.
