  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon toasted sesame seeds or coconut flakes for garnish

Instructions

  1. Rinse 1 cup (200 g) glutinous rice under cold water until it runs almost clear to remove excess starch. Soak the rice in fresh water for at least 4 hours or overnight.
  2. Drain the soaked rice well. Place it in a steamer basket lined with cheesecloth or a clean kitchen towel. Steam over boiling water for 20-25 minutes, stirring once halfway through, until grains turn translucent and tender but still chewy.
  3. While rice steams, combine 1 1/2 cups (360 ml) full-fat coconut milk, 3 tablespoons maple syrup or coconut sugar, 1/4 teaspoon salt, and 1 teaspoon vanilla extract (if using) in a medium saucepan. Warm over low heat, stirring frequently, until sugar dissolves and sauce is fragrant, about 5 minutes. Do not boil.
  4. Transfer steamed sticky rice to a bowl. Pour about two-thirds of the warm coconut sauce over the rice, gently folding to combine. Cover and let sit for 15-20 minutes to absorb the sauce fully. Rice should be moist but not soupy.
  5. Peel and slice 2 ripe mangoes into thin segments or cubes. Toast 1 tablespoon sesame seeds or coconut flakes in a dry skillet over medium heat until golden and aromatic, about 2-3 minutes.
  6. Spoon coconut-infused sticky rice onto serving plates, arrange mango slices on top or beside, and drizzle with reserved coconut sauce. Sprinkle toasted seeds or flakes for garnish.
