A creamy, spicy, and easy slow cooker Buffalo chicken dip perfect for parties and casual gatherings. Made with shredded chicken, cream cheese, buffalo sauce, and cheeses, it delivers bold flavor with minimal effort.

  • 3 cups (450g) shredded cooked chicken (rotisserie or leftover baked chicken)
  • 8 oz (225g) cream cheese, softened
  • 3/4 cup (180ml) buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup (120ml) ranch or blue cheese dressing
  • 1 cup (115g) shredded cheddar cheese
  • 1/2 cup (55g) shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare the chicken: If not using pre-cooked shredded chicken, cook and shred about 3 cups (450g) of chicken breasts or thighs. Let cool slightly.
  2. Soften the cream cheese by leaving it at room temperature for 30 minutes or microwaving in 15-second bursts until soft but not melted.
  3. In a medium bowl, combine softened cream cheese, buffalo wing sauce, ranch or blue cheese dressing, garlic powder, onion powder, salt, and black pepper. Stir until smooth.
  4. Fold in shredded chicken, shredded cheddar cheese, and shredded mozzarella cheese. Mix gently to combine evenly.
  5. Transfer the mixture to the slow cooker insert and spread evenly. Set slow cooker to low heat.
  6. Cover and cook for 2 to 3 hours on low, stirring once or twice to prevent sticking and ensure even heating. Check at 2 hours for hot, bubbly dip with melted cheese.
  7. Once cooked, stir well and adjust seasoning if needed. Add more buffalo sauce for extra heat or more salt to taste.
  8. Serve warm, garnished with chopped green onions or crumbled blue cheese if desired. Pair with celery sticks, carrot sticks, tortilla chips, or toasted baguette slices.

Notes

Soften cream cheese before mixing to avoid lumps. Stir dip once or twice during cooking to prevent sticking. For thicker dip, cook uncovered for last 15 minutes. Can be made ahead and reheated. Freeze leftovers up to 2 months.
