  • 68 medium fresh strawberries, hulled and quartered
  • 1012 fresh mint leaves
  • 2 tablespoons fresh lime juice (from 1 large lime)
  • 2 tablespoons simple syrup (store-bought or homemade)
  • 1 cup (240 ml) sparkling water or club soda
  • Ice cubes
  • Optional: lime slices and extra strawberries for garnish

Instructions

  1. Wash strawberries and mint leaves thoroughly. Hull and quarter the strawberries. Juice the lime, removing any seeds. Set simple syrup and sparkling water nearby.
  2. In a glass or mixing container, add quartered strawberries and mint leaves. Gently muddle using a muddler or spoon to release juices and oils without pulverizing.
  3. Pour in fresh lime juice and simple syrup over the muddled mixture. Stir gently to combine and adjust sweetness if needed.
  4. Fill the glass about halfway with ice cubes.
  5. Slowly pour sparkling water or club soda over the ice and muddled mixture. Stir gently to combine without losing fizz.
  6. Garnish with a sprig of mint and a couple of strawberry slices or a lime wheel on the rim. Serve immediately.

Notes

Do not over-muddle to avoid bitterness and pulp. Use fresh, ripe strawberries and bright green mint leaves for best flavor. Chill glasses before serving for a cooler drink. Adjust sweetness and tartness to taste. Stir gently after adding soda to preserve carbonation.
