Instructions

  1. Preheat your oven to 350°F (175°C). Place your cast iron skillet on the middle rack to warm up slightly while you prepare the dough (about 5 minutes).
  2. In a large bowl, cream together the softened unsalted butter, packed brown sugar, and granulated sugar until light and fluffy (3-4 minutes with a mixer or about 5 minutes by hand).
  3. Add the large egg and pure vanilla extract to the butter and sugar mixture. Mix until combined but do not overbeat.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Slowly add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  6. Fold in the dark, milk, and white chocolate chunks gently, keeping them evenly distributed.
  7. Carefully remove the warmed skillet from the oven and spread the dough evenly inside. Sprinkle a pinch of flaky sea salt on top.
  8. Bake for 18-22 minutes until the edges are golden brown but the center remains soft and slightly underbaked. Start checking at 15 minutes to avoid overbaking.
  9. Cool the cookie in the skillet for 10 minutes before serving to allow it to set while remaining gooey inside.
