This recipe delivers tender beef tips with rich gravy cooked quickly in an Instant Pot, paired with creamy mashed potatoes for a comforting and satisfying meal.

  • 2 pounds beef sirloin or chuck, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons all-purpose flour (or cornstarch for gluten-free)
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme, chopped (optional)
  • 3 large Russet potatoes, peeled and quartered
  • 1/2 cup milk or cream (dairy-free milk if preferred)
  • 2 tablespoons unsalted butter for potatoes
  • Salt for seasoning potatoes

Instructions

  1. Pat the beef tips dry with paper towels. Toss them in a bowl with 2 tablespoons of flour, salt, and pepper to coat evenly.
  2. Turn Instant Pot to ‘Sauté’ mode on high. Add olive oil and heat until shimmering. In batches, sear beef tips until browned on all sides, about 3 minutes per batch. Transfer to a plate.
  3. Add butter to the pot. Once melted, add chopped onion and cook until translucent, about 4 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Pour in beef broth and Worcestershire sauce, scraping up browned bits from the bottom of the pot.
  5. Return beef tips to the pot. Sprinkle remaining tablespoon of flour over the mixture and stir well to combine. Seal the Instant Pot lid and set to ‘Manual’ or ‘Pressure Cook’ on high for 35 minutes. Ensure valve is sealed.
  6. While beef cooks, place peeled and quartered potatoes in a pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well.
  7. Mash potatoes with butter and warm milk or cream until smooth and creamy. Season with salt to taste.
  8. After natural pressure release (10 minutes), open lid carefully. Switch Instant Pot to ‘Sauté’ mode and simmer beef tips for 5 minutes to thicken gravy, stirring occasionally. Add fresh thyme if using. Adjust seasoning with salt and pepper.
  9. Serve beef tips and rich gravy over mashed potatoes. Garnish with fresh thyme or parsley if desired.

Notes

Do not skip searing the beef to develop flavor. Use natural pressure release for 10 minutes to keep beef tender. If gravy is too thin, mix 1 teaspoon cornstarch with cold water and stir into simmering gravy until thickened. Fresh thyme enhances aroma but is optional. For gluten-free, substitute flour with cornstarch. Dairy-free butter and milk alternatives can be used for mashed potatoes.
