  • 2 boneless, skinless chicken breasts, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 large flour tortillas
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 avocado, mashed or sliced
  • 2 Roma tomatoes, diced
  • 1 cup chopped romaine lettuce
  • 1 tablespoon lime juice

Instructions

  1. Dice the chicken breasts into bite-sized pieces. Mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl to create the southwest seasoning. Rub the seasoning onto the chicken.
  2. Heat olive oil in a skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove from heat.
  3. Mash the avocado in a bowl until smooth. Add lime juice, and season with salt and pepper to taste. Blend with a splash of water or Greek yogurt for a creamier texture if desired.
  4. Dice the tomatoes, chop the lettuce, and set them aside. Rinse and drain the black beans if using canned.
  5. Lay a tortilla on a flat surface. Spread a layer of avocado dressing on it. Add a handful of chicken, black beans, corn kernels, shredded cheese, tomatoes, and lettuce.
  6. Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with the remaining tortillas.
  7. Optional: Toast the wraps in a dry skillet for 1-2 minutes on each side until lightly golden and crispy.
  8. Serve immediately while warm and enjoy!
