A comforting and flavorful meatloaf recipe that combines the savory goodness of a bacon cheeseburger with the nostalgia of a classic meatloaf.

  • 1 lb ground beef (80/20 blend)
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup bread crumbs (regular or panko)
  • 2 large eggs, beaten
  • 1/4 cup milk
  • 1/2 cup onion, finely diced
  • 1/4 cup pickles, chopped (optional)
  • 1/4 cup ketchup
  • 2 tbsp mustard (yellow or Dijon)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, cooked bacon, shredded cheddar, bread crumbs, beaten eggs, milk, diced onion, chopped pickles (if using), ketchup, mustard, salt, and pepper. Mix everything together until well combined, but don’t overwork the meat mixture—it can make the meatloaf too dense.
  3. Lightly grease a loaf pan or line it with parchment paper. Transfer the meat mixture to the pan, pressing it down gently to form an even layer.
  4. In a small bowl, mix additional ketchup and mustard to create the glaze. Spread this evenly over the top of the meatloaf.
  5. Bake the meatloaf for 45-50 minutes, or until the internal temperature reaches 160°F (71°C). If the glaze starts to brown too much, cover the meatloaf loosely with aluminum foil.
  6. Let the meatloaf rest for 5-10 minutes after baking to allow the juices to redistribute.
