Instructions

  1. Drain and rinse the canned jackfruit thoroughly. Shred it into bite-sized pieces using two forks, removing any seeds or tougher core bits.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until soft and translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Add the shredded jackfruit to the skillet. Stir to combine with onions and garlic. Sprinkle smoked paprika, cumin, chili powder (if using), salt, and pepper. Stir well and cook for 5-7 minutes until jackfruit starts to brown slightly.
  4. In a medium bowl, whisk together soy sauce, maple syrup, toasted sesame oil, rice vinegar, grated ginger, minced garlic, and sriracha (if using).
  5. Pour the sauce over the cooked jackfruit in the skillet. Stir well to coat all strands. Reduce heat to low and simmer gently for 8-10 minutes, stirring occasionally until sauce thickens and soaks in.
  6. While jackfruit simmers, lightly toast slider buns and prepare shredded cabbage or coleslaw.
