Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off the garlic head to expose the cloves, drizzle with olive oil, sprinkle with salt, then wrap tightly in foil. Roast for 30–40 minutes until cloves are soft and golden. Let cool slightly, then squeeze out and mash into a smooth paste.
  2. Reduce oven temperature to 350°F (175°C). In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (3-4 minutes). Add eggs one at a time, beating well after each addition. Stir in vanilla extract and roasted garlic paste.
  3. In a separate bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, mixing on low speed or folding gently until just combined.
  4. Fold in chocolate chips evenly into the dough.
  5. Spoon dough into a prepared 10-inch cast iron skillet, spreading evenly and pressing down gently.
  6. Bake for 25–30 minutes until edges are golden and firm, center slightly soft and gooey. Check doneness at 25 minutes with a toothpick; it should come out with a few moist crumbs.
  7. Let cookie cool in skillet for at least 10 minutes before slicing and serving warm.
