  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 34 fresh jalapeños, seeded and finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 6 slices thick-cut bacon, cooked crispy and chopped
  • Optional: chopped fresh chives or green onions
  • Optional: extra shredded cheese for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook bacon in a cold skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and chop into bite-sized pieces. Save a tablespoon of bacon fat if desired.
  3. Wash jalapeños, slice in half, remove seeds if less heat is preferred, and finely chop. Use gloves to avoid irritation.
  4. In a medium mixing bowl, combine softened cream cheese, shredded cheddar, Monterey Jack, and sour cream. Mix until smooth and creamy.
  5. Stir in chopped jalapeños, garlic powder, and onion powder until evenly distributed.
  6. Transfer mixture to an 8×8 inch baking dish and smooth the top. Sprinkle chopped crispy bacon evenly over the surface. Add extra shredded cheese on top if desired.
  7. Bake for 20-25 minutes until bubbly and cheese is melted with a slight golden brown.
  8. Optional: Broil for 1-2 minutes to brown the cheese topping, watching carefully to avoid burning.
  9. Remove from oven, garnish with chopped chives or green onions, and let cool for 5 minutes before serving.

Notes

Use softened cream cheese for smooth blending. Cook bacon slowly over medium heat for best crispiness. Adjust jalapeño seeds to control heat. Let dip rest 5 minutes after baking for easier serving. Warm gently if too thick after cooling.
