  • 2 tablespoons packed brown sugar (light or dark)
  • 2 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • Β½ teaspoon salt
  • ΒΌ teaspoon freshly ground black pepper
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Peel and cut the carrots into evenly-sized pieces. If using baby carrots, skip the slicing step.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sautΓ© for about 1 minute, or until fragrant, being careful not to burn the garlic.
  3. Add the carrots to the skillet and toss gently to coat them in the butter and garlic mixture.
  4. Sprinkle the brown sugar, salt, and black pepper evenly over the carrots. Stir well to distribute the sugar and seasonings.
  5. Lower the heat to medium-low and cover the skillet. Cook for about 8-10 minutes, stirring occasionally, until the carrots start to soften.
  6. Uncover the skillet and increase the heat back to medium. Cook for another 5-7 minutes, stirring frequently, until the carrots are tender and the brown sugar has caramelized into a sticky glaze.
  7. Transfer the carrots to a serving dish and garnish with freshly chopped parsley if desired.

Notes

For a dairy-free version, substitute butter with olive oil or a plant-based spread. Adjust sweetness by adding more or less brown sugar. For a spicy kick, add a pinch of cayenne or red pepper flakes.
