  • 1 whole ribeye roast (about 4–5 lbs), boneless
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup unsalted butter, softened
  • 4–5 cloves garlic, minced (about 2 tablespoons)
  • 3 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves, chopped (optional)
  • 1 teaspoon coarse sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup low-sodium beef broth

Instructions

  1. Remove the ribeye roast from the fridge and let it rest, uncovered, for 30–60 minutes to come to room temperature. Pat dry with paper towels.
  2. Preheat oven to 475Β°F. Place oven rack in the lower third of the oven.
  3. Rub roast all over with olive oil. Generously season all sides with kosher salt and freshly ground black pepper.
  4. In a small bowl, mash together softened butter, minced garlic, chopped rosemary, thyme (if using), sea salt, and black pepper until smooth.
  5. Optional: Sear the roast in a large skillet over medium-high heat for 2 minutes per side until browned.
  6. Place roast on a rack in a roasting pan. Spread rosemary garlic butter all over the top and sides.
  7. Pour beef broth into the bottom of the pan.
  8. Roast at 475Β°F for 15 minutes. Reduce heat to 325Β°F and continue roasting for 60–75 minutes, or until a meat thermometer reads 130–135Β°F for medium-rare.
  9. Halfway through roasting, baste the roast with pan juices. Tent with foil if browning too quickly.
  10. Transfer roast to a cutting board, tent with foil, and let rest for 20–30 minutes.
  11. Slice against the grain and serve with pan juices and extra rosemary if desired.

Notes

Let the roast come to room temperature for even cooking. Use a meat thermometer for perfect doneness and always let the roast rest before slicing. Baste with pan juices for extra flavor. For a crispier crust, broil for 2–3 minutes at the end. Leftovers make excellent sandwiches.
