Refreshing Sparkling Blueberry Mint Lemonade Punch

A bright, bubbly, and lightly sweetened punch combining fresh lemon juice, blueberry puree, mint, and sparkling water. Perfect for summer parties and casual gatherings.

Ingredients

  • 45 fresh lemons (for juicing, about 1 cup or 240ml lemon juice)
  • 1 cup (150g) frozen or fresh blueberries
  • 1015 fresh mint leaves, plus extra for garnish
  • 1/4 cup (50g) sugar or honey
  • 1/4 cup (60ml) water (for simple syrup)
  • 4 cups (1 liter) cold sparkling water
  • Optional: 1 cup (240ml) cold still water to dilute
  • Ice cubes

Instructions

  1. Roll each lemon on the counter to loosen juice, cut in half, and juice until you have about 1 cup (240ml) of fresh lemon juice (about 4-5 medium lemons).
  2. Add 1 cup (150g) of frozen or fresh blueberries to a blender with 2 tablespoons of water and blend until smooth, about 30 seconds. Optionally strain for a smoother punch.
  3. Make simple syrup by heating 1/4 cup (50g) sugar with 1/4 cup (60ml) water on medium heat until sugar dissolves, about 3-4 minutes. Let cool. Alternatively, stir honey or maple syrup without heating.
  4. In a large pitcher, combine lemon juice, blueberry puree, and cooled simple syrup. Stir well.
  5. Tear or gently bruise 10-15 fresh mint leaves and add to the pitcher. Stir gently.
  6. Refrigerate the mixture for at least 30 minutes to chill and let flavors meld.
  7. Before serving, add 4 cups (1 liter) cold sparkling water. If too strong, add up to 1 cup (240ml) cold still water. Stir gently to combine without losing bubbles.
  8. Serve over ice cubes, garnished with extra mint leaves and whole blueberries.

Notes

Use organic lemons for brighter flavor. For less sweetness, reduce simple syrup and adjust after chilling. Frozen blueberries can double as ice cubes to keep punch cold without watering it down. Avoid over-stirring after adding sparkling water to preserve bubbles. Store base separately from sparkling water for up to 2-3 days refrigerated.
