  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 small red onion, thinly sliced (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons (8 g) chopped fresh parsley or basil
  • 1/4 cup (30 g) crumbled feta or shaved Parmesan (optional)

Instructions

  1. Slice 12 oz (340 g) flank steak thinly against the grain. Season lightly with salt and pepper and set aside in a bowl.
  2. Chop 1/3 cup (50 g) oil-packed sun-dried tomatoes into small pieces, keeping the oil.
  3. In a small bowl, whisk together 2 tablespoons (30 ml) olive oil, 2 minced garlic cloves, 1 tablespoon (15 ml) fresh lemon juice, and a pinch of salt and pepper to make the dressing.
  4. Heat a non-stick skillet or cast iron pan over medium-high heat until hot.
  5. Add beef slices in a single layer (in batches if needed) and sear each side for about 2 minutes until browned but still tender. Remove and set aside.
  6. In a large bowl, combine 4 cups (120 g) spring greens, thinly sliced red onion (if using), chopped sun-dried tomatoes, and fresh herbs. Drizzle half the dressing and toss gently.
  7. Add the warm beef slices on top of the salad, drizzle the remaining dressing, and sprinkle with crumbled feta or Parmesan if desired. Toss lightly or serve layered.

Notes

Slice beef thinly against the grain for tenderness. Avoid overcrowding the pan to ensure proper searing. Use the oil from sun-dried tomatoes in the dressing for extra flavor.
