Quick Irish Apple Cake Recipe with Easy Honey Mustard Glaze

  • 2 cups (250g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup (240ml) buttermilk (or milk with 1 tbsp lemon juice as a substitute)
  • 2 medium apples, peeled, cored, and chopped (Granny Smith preferred)
  • 3 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp unsalted butter, melted
  • 1 tsp apple cider vinegar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your cake pan with butter or non-stick spray and line it with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, beat softened butter with granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Add the flour mixture in three parts, alternating with buttermilk, starting and ending with the flour. Mix gently until just combined.
  6. Fold in the chopped apples using a rubber spatula.
  7. Pour batter into the prepared pan and smooth the top. Tap the pan gently to release air bubbles.
  8. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean and the top is golden brown.
  9. While baking, whisk together honey, Dijon mustard, melted butter, and apple cider vinegar to make the glaze.
  10. When the cake is hot out of the oven, spread the honey mustard glaze evenly over the top.
  11. Let the cake cool on a rack for at least 15 minutes before slicing.

Notes

If apples are too juicy, toss them lightly in a teaspoon of flour before folding into batter to prevent sogginess. Avoid overmixing the batter to keep the cake tender. Apply glaze while cake is hot for best absorption and shine. Room temperature ingredients improve texture. Check cake starting at 35 minutes to avoid overbaking.
