Quick Garlic Butter Steak Bites Recipe with Crispy Potatoes

A quick and easy recipe featuring tender garlic butter steak bites paired with crispy golden potatoes, perfect for a satisfying weeknight meal.

  • 1 lb sirloin steak, trimmed and cut into 1-inch cubes
  • 2 tablespoons olive oil (for steak)
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1 lb baby Yukon Gold potatoes, halved or quartered
  • 2 tablespoons olive oil (for potatoes)
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash and halve or quarter the baby Yukon Gold potatoes. Toss them in a medium bowl with 2 tablespoons olive oil, smoked paprika, garlic powder, salt, and pepper until well-coated.
  2. Heat a skillet over medium-high heat. Add the potatoes cut-side down and cook without moving for 5–7 minutes until golden and crispy. Flip and cook another 7–10 minutes until tender inside and crispy outside.
  3. While potatoes cook, pat the steak cubes dry with paper towels. Season generously with salt and pepper. Mince the garlic and set aside.
  4. In a large cast-iron skillet, heat 2 tablespoons olive oil over medium-high heat until shimmering. Add steak cubes in a single layer without crowding. Sear undisturbed for 2–3 minutes, then flip and sear another 2 minutes until browned but juicy inside.
  5. Reduce heat to medium-low. Add 2 tablespoons butter, minced garlic, and thyme to the skillet. Stir gently, spooning the melted garlic butter over the steak bites for 1–2 minutes, being careful not to burn the garlic.
  6. Remove steak bites from heat and let rest for a minute. Toss potatoes with fresh parsley. Serve steak bites alongside crispy potatoes, spooning extra garlic butter from the pan on top.

Notes

Cook steak bites in batches if skillet is crowded to avoid steaming. Dry steak cubes thoroughly before searing for best crust. Lower heat when adding garlic butter to prevent burning garlic. For extra crispy potatoes, cook cut-side down first without stirring.
