  • 1 pound thinly sliced corned beef
  • 12 slices Swiss cheese (about 6 ounces)
  • 1 cup sauerkraut, drained and lightly squeezed
  • 3 tablespoons unsalted butter, softened
  • For the Zesty Chipotle Crema:
  • ½ cup sour cream (or Greek yogurt)
  • 1 chipotle pepper in adobo, finely chopped
  • 1 teaspoon adobo sauce
  • 1 teaspoon fresh lime juice
  • 1 small garlic clove, minced
  • Salt and pepper to taste
  • Optional garnish: fresh chopped parsley or dill

Instructions

  1. Prepare the Chipotle Crema: In a small bowl, combine sour cream, finely chopped chipotle pepper, adobo sauce, lime juice, minced garlic, and a pinch of salt and pepper. Stir well until blended. Set aside in the fridge. (5 minutes)
  2. Prep the Buns: Slice slider buns in half horizontally if not pre-sliced. Spread softened butter generously on the cut sides. (2 minutes)
  3. Assemble the Sliders: On the bottom halves of the buns, layer corned beef evenly, then top with Swiss cheese slices. Add a spoonful of drained sauerkraut on top of the cheese. Place the top halves of the buns over each slider. (3 minutes)
  4. Toast the Sliders: Heat skillet over medium heat. Place sliders buttered-side down on skillet. Press gently with spatula or heavy lid. Cook 3-4 minutes until bottom is golden and crispy. Flip and toast other side 3-4 minutes, pressing gently. (6-8 minutes total)
  5. Serve: Remove sliders from skillet and let rest for a minute. Serve warm with a dollop or drizzle of chipotle crema on top or on the side for dipping. (1 minute)

Notes

Drain sauerkraut well to prevent soggy buns. Use unsalted butter generously for crispy buns. Toast sliders on medium heat to melt cheese without burning bread. Chipotle crema tastes better after resting a few hours or overnight. Sliders can be frozen before toasting for up to one month.
