An easy and elegant brunch board featuring flaky croissants, silky smoked salmon, and creamy herbed cream cheese, perfect for quick weekend mornings or surprise guests.

Ingredients

  • 4 large flaky croissants
  • 8 oz (225 g) thinly sliced smoked salmon
  • 8 oz (225 g) softened cream cheese
  • 2 tbsp chopped fresh dill and/or chives
  • 1 medium lemon, thinly sliced and zested
  • 2 tbsp drained capers
  • 1 small cucumber, thinly sliced (optional)
  • ¼ small red onion, thinly sliced or pickled
  • 1 ripe avocado, sliced (optional)
  • A handful of mixed greens or arugula
  • A drizzle of extra virgin olive oil (optional)
  • Freshly cracked black pepper, to taste
  • Optional extras: cherry tomatoes, radishes, soft boiled egg

Instructions

  1. Slice the croissants in half horizontally, being gentle to avoid crumbling.
  2. Thinly slice the lemon, cucumber, red onion, and avocado. Chop fresh herbs finely and drain the capers.
  3. In a bowl, mix softened cream cheese with chopped dill and chives, add a pinch of black pepper and a small squeeze of lemon juice. Stir until smooth and creamy. Adjust seasoning as needed.
  4. Lay croissant halves on the serving board with cut sides up. Spread a generous layer of herbed cream cheese on each half.
  5. Fold or gently roll smoked salmon slices and place over the cream cheese, about 2 oz per croissant half.
  6. Scatter lemon slices, capers, cucumber, red onion, avocado slices, and mixed greens or arugula around and on top of the croissants.
  7. Drizzle with olive oil and crack fresh black pepper over everything.
  8. Add optional extras like cherry tomatoes or radish slices for color and crunch.
  9. Serve immediately or cover loosely with foil and refrigerate up to 2 hours before serving.

Notes

Use fresh croissants for best flaky texture; warm stale croissants slightly if needed. Soften cream cheese but avoid melting. Handle smoked salmon gently by folding or rolling slices. Rinse very salty salmon briefly under cold water and pat dry. Leave avocado skin on until serving to prevent browning. Assemble board shortly before serving to keep croissants fresh.
