Ingredients

  • Pre-made cinnamon rolls (8-12 rolls; recommended Pillsbury)
  • Unsalted butter (2 tbsp, melted)
  • Ground cinnamon (1 tbsp, optional for sprinkling)
  • Cream cheese (4 oz, softened)
  • Unsalted butter (2 tbsp, softened)
  • Powdered sugar (1 cup, sifted)
  • Vanilla extract (1 tsp)
  • Strawberry extract (1/2 tsp)
  • Milk (1-2 tbsp, to thin frosting as needed)
  • Red or pink food coloring (a few drops)
  • Fresh strawberries (sliced)
  • Edible flowers (optional)
  • Sprinkles or pink sanding sugar
  • Fresh mint leaves

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Place pre-made cinnamon rolls evenly spaced on the baking sheet. Optionally brush with melted butter and sprinkle cinnamon on top.
  3. Bake rolls according to package instructions, about 20-25 minutes, until golden and puffed.
  4. While rolls bake, combine softened cream cheese and butter in a mixing bowl. Beat until creamy and smooth.
  5. Slowly add powdered sugar, vanilla extract, and strawberry extract, mixing after each addition.
  6. Add milk 1 tablespoon at a time to reach desired spreading consistency.
  7. Add a few drops of red or pink food coloring and mix gently until pastel pink is achieved.
  8. Once rolls are out of the oven, let cool for 5-7 minutes until warm but not hot.
  9. Spread pink frosting generously over each cinnamon roll using a spatula or butter knife.
  10. Transfer frosted rolls onto serving board, arranging closely but not squished.
  11. Garnish with sliced fresh strawberries, sprinkles or pink sanding sugar, edible flowers, and fresh mint leaves.
  12. Add any extra sprinkles or a light dusting of powdered sugar before serving.
  13. Serve immediately for best gooey texture.

Notes

Let rolls cool 5-7 minutes before frosting to prevent melting. If frosting is too thick, add a splash of milk to loosen. Use plant-based alternatives for dairy-free and gluten-free cinnamon rolls for dietary adaptations. Avoid too much food coloring to keep pastel pink frosting natural looking.
